- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the ricotta cheese, chopped spinach, minced garlic, and half of the Parmesan. Season with salt and pepper.
- Season the chicken breasts with salt and pepper on both sides.
- Spread the ricotta mixture evenly over each chicken breast in a greased baking dish.
- Top with the remaining Parmesan cheese.
- Bake for 25-30 minutes until the chicken is cooked through and the topping is golden and bubbling.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to three days.
- Reheat in the oven or microwave until heated through.
- Complement with roasted vegetables or a fresh green salad for a balanced meal.
