Instructions
- Mash ripe bananas and whisk dry ingredients (flour, baking soda, salt) in a bowl.
- Cream butter and brown sugar, then add eggs, vanilla, mashed bananas, and sour cream.
- Preheat oven to 350°F (175°C) and prepare a greased loaf pan.
- Pour batter into pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool cake completely, then frost with cream cheese frosting (beat cream cheese, butter, powdered sugar, and vanilla).
Notes
- Use very ripe bananas for best sweetness and flavor.
- Do not overmix the batter to keep the cake tender.
- Cool cake fully before frosting to prevent melting.
- Store in an airtight container in the fridge for up to 5 days.
