  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Mash ripe bananas and whisk dry ingredients (flour, baking soda, salt) in a bowl.
  2. Cream butter and brown sugar, then add eggs, vanilla, mashed bananas, and sour cream.
  3. Preheat oven to 350°F (175°C) and prepare a greased loaf pan.
  4. Pour batter into pan and bake for 50-60 minutes until a toothpick comes out clean.
  5. Cool cake completely, then frost with cream cheese frosting (beat cream cheese, butter, powdered sugar, and vanilla).
