- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp BBQ sauce (plus more for serving)
- 1 bell pepper, cut into cubes
- 1 red onion, cut into wedges
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Cut the chicken breasts into bite-sized pieces and marinate with olive oil, BBQ sauce, salt, and pepper for at least 30 minutes.
- Assemble skewers by alternating marinated chicken, bell pepper cubes, and red onion wedges.
- Preheat the grill to medium-high heat. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is fully cooked.
- Remove skewers from the grill, let them cool slightly, and toss with mixed greens and cherry tomatoes. Drizzle with extra BBQ sauce before serving.
