Ingredients
Scale
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 cups buttermilk
- 4 large eggs
- 6 tablespoons melted butter
- 2 cups fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the buttermilk, eggs, and melted butter. Gradually add to the dry ingredients until just combined, then fold in the blueberries.
- Pour the batter into a greased casserole dish and spread evenly. Bake for 30 to 35 minutes until golden brown and a toothpick comes out clean.
- Allow the casserole to cool for a few minutes, then slice and serve warm with maple syrup, fresh blueberries, or powdered sugar.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Can be paired with crispy bacon, fruit salads, or whipped cream for a fuller brunch experience.
- Frozen blueberries can be used, but thaw and drain to avoid excess moisture.
- The batter can be prepared the night before and refrigerated.
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
