Description

Enjoy a hearty and flavorful homemade loaf with this easy cabbage bread recipe. This savory bread combines the goodness of fresh cabbage with a soft, delicious texture. Perfect as a side dish or a unique sandwich bread, this recipe is sure to impress!

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm milk (105-115°F)
  • 4 tablespoons melted butter
  • 1 medium head of cabbage, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Optional: 1 tablespoon fresh herbs like thyme or rosemary, chopped

Instructions

  1. Sauté the Cabbage Mixture: Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and shredded cabbage, and sauté until the cabbage is tender and slightly caramelized, about 10-15 minutes. Season with salt and pepper. Let it cool slightly.
  2. Prepare the Dough: In a large bowl, combine flour, sugar, and salt. In a separate small bowl, dissolve yeast in warm milk. Let it sit for 5 minutes until foamy. Add the yeast mixture and melted butter to the dry ingredients.
  3. Combine Dough and Cabbage: Mix well until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
  4. First Rise: Incorporate the sautéed cabbage mixture into the dough, kneading until evenly distributed. Place the dough in a greased bowl, turning to coat. Cover with a clean kitchen towel and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  5. Shape and Second Rise: Preheat oven to 375°F (190°C). Punch down the dough and shape it into a loaf. Place the loaf in a greased loaf pan. Let it rest for another 20 minutes.
  6. Bake: Bake for 30-35 minutes, or until golden brown and the internal temperature reaches 200°F (93°C). Let cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure the yeast is fresh to get the best rise.
  • Don’t skip the sautéing step for the cabbage; it enhances the flavor.
  • Knead the dough well to achieve a light and airy texture.
  • Let the dough rise in a warm place for optimal results.
  • Add shredded cheddar or Gruyère cheese for a cheesy twist.
  • Experiment with fresh thyme, rosemary, or dill for added aroma.
  • Add caraway seeds or a pinch of paprika for extra flavor.
  • Grated carrots or zucchini can be added for extra nutrients.
