- 3 ripe bananas, mashed ๐

- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and prepare your ingredients.
- In a large bowl, mix mashed bananas, shredded carrots, sugars, oil, eggs, and vanilla until well combined. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon, then gradually incorporate the dry ingredients into the wet ingredients.
- Pour the batter into a greased or lined loaf pan and spread it evenly.
- Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
Notes
- To keep the bread fresh, store it in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze for up to 3 months.
- This bread can be served warm, toasted, or at room temperature.
- Adding cream cheese frosting makes for an indulgent treat!
