  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup melted butter
  • 1 large egg, lightly beaten
  • 1 cup shredded cheddar cheese, divided
  • 23 jalapeños, seeded and diced (adjust to your spice preference)

Instructions

  1. Preheat oven to 400°F (200°C). If using a cast iron skillet, place it in the oven while it preheats.
  2. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the buttermilk, melted butter, and egg. Mix well until the egg is fully incorporated. Add ¾ cup of the shredded cheddar cheese to the wet ingredients and stir gently.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the diced jalapeños.
  5. Carefully remove the hot skillet from the oven and pour the batter into the skillet. Alternatively, grease a 9-inch baking pan and pour the batter in. Sprinkle the remaining cheddar cheese over the top.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Notes

  • Don’t Overmix: Overmixing develops the gluten in the flour, resulting in a tougher cornbread. Mix until just combined.
  • Use Buttermilk: Buttermilk adds a tangy flavor and makes the cornbread more tender.
  • Hot Skillet: If using a cast iron skillet, preheating it in the oven ensures a crispy crust.
