- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup melted butter
- 1 large egg, lightly beaten
- 1 cup shredded cheddar cheese, divided
- 2–3 jalapeños, seeded and diced (adjust to your spice preference)
Instructions
- Preheat oven to 400°F (200°C). If using a cast iron skillet, place it in the oven while it preheats.
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the buttermilk, melted butter, and egg. Mix well until the egg is fully incorporated. Add ¾ cup of the shredded cheddar cheese to the wet ingredients and stir gently.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the diced jalapeños.
- Carefully remove the hot skillet from the oven and pour the batter into the skillet. Alternatively, grease a 9-inch baking pan and pour the batter in. Sprinkle the remaining cheddar cheese over the top.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Notes
- Don’t Overmix: Overmixing develops the gluten in the flour, resulting in a tougher cornbread. Mix until just combined.
- Use Buttermilk: Buttermilk adds a tangy flavor and makes the cornbread more tender.
- Hot Skillet: If using a cast iron skillet, preheating it in the oven ensures a crispy crust.
- Adjust the Spice: Adjust the amount of jalapeños to your preference. For a milder cornbread, remove the seeds and membranes from the jalapeños.
