- 1 whole chicken (about 3β4 pounds)
- 12 cups of water
- 2 large carrots, peeled and chopped
- 2 stalks of celery, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 8 ounces egg noodles
- 2 teaspoons salt, or to taste
- 1 teaspoon black pepper, or to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Place the whole chicken in a large stockpot and cover it with 12 cups of water. Add the chopped carrots, celery, and onion to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the chicken is cooked through and tender.
- Carefully remove the chicken from the pot and set it aside to cool slightly. Once itβs cool enough to handle, shred the chicken meat using two forks. Discard the skin and bones. Skim any excess fat from the surface of the broth in the pot.
- Return the shredded chicken to the pot with the broth and vegetables. Add the minced garlic, salt, and pepper. Bring the soup to a gentle boil, then add the egg noodles. Cook the noodles according to package directions, usually about 6-8 minutes, or until they are tender.
