Description

These Classic Garlic Roasted Potatoes are the perfect side dish, boasting a crispy golden exterior and a fluffy interior infused with savory garlic and aromatic rosemary. Easy to make and guaranteed to be a crowd-pleaser for any occasion!

  • 2 lbs Yellow Potatoes, washed and cubed
  • 6 cloves Garlic, minced
  • 2 sprigs Fresh Rosemary, chopped
  • 1/4 cup Olive Oil
  • Salt and Black Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and cube the yellow potatoes into approximately 1-inch pieces. Place the cubed potatoes in a large mixing bowl.
  2. Add the minced garlic and chopped fresh rosemary to the bowl with the potatoes.
  3. Drizzle the olive oil over the potatoes, garlic, and rosemary. Season generously with salt and black pepper. Toss everything together until the potatoes are evenly coated.
  4. Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 30-40 minutes, or until the potatoes are golden brown and easily pierced with a fork. Flip the potatoes halfway through for even cooking.

Notes

  • For extra crispy potatoes, ensure they are spread in a single layer on the baking sheet. Overcrowding can lead to steaming instead of roasting. Roasting at 400°F (200°C) helps achieve the perfect crispy exterior. Flipping the potatoes halfway through ensures even browning on all sides.
  • Experiment with different herbs such as thyme, oregano, or parsley. Sprinkle some grated Parmesan cheese over the potatoes during the last 5 minutes of roasting. Add a pinch of red pepper flakes or smoked paprika for a little heat.
