- 2 lbs Yellow Potatoes, washed and cubed
- 6 cloves Garlic, minced

Instructions
- Preheat your oven to 400°F (200°C). Wash and cube the yellow potatoes into approximately 1-inch pieces. Place the cubed potatoes in a large mixing bowl.
- Add the minced garlic and chopped fresh rosemary to the bowl with the potatoes.
- Drizzle the olive oil over the potatoes, garlic, and rosemary. Season generously with salt and black pepper. Toss everything together until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 30-40 minutes, or until the potatoes are golden brown and easily pierced with a fork. Flip the potatoes halfway through for even cooking.
