- 6 slices of bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced

- 4 cups vegetable broth
- 1 cup milk
- 1/2 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving bacon fat in the pot.
- Add chopped onion and minced garlic to the pot with bacon fat. SautΓ© until onion is translucent, about 5 minutes. Add diced potatoes and corn kernels. Cook for another 5 minutes, stirring occasionally.
- Pour vegetable broth into the pot, ensuring it covers vegetables. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in milk, heavy cream, and butter. Heat through, but do not boil. Season with salt and pepper to taste. Return cooked bacon to the pot, reserving some for garnish. Ladle into bowls and garnish with fresh parsley and additional bacon.
