Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
- Add garlic and thyme, cook for 1 minute until fragrant.
- Add rinsed wild rice and broth. Bring to boil, then reduce to simmer. Cover and cook for 30 minutes.
- Add mushrooms and kale. Season with salt and pepper. Simmer uncovered for 15 minutes.
