  • 6 cups vegetable broth (or chicken broth)
  • 8 ounces mushrooms (cremini or wild), sliced
  • 2 cups kale, chopped (stems removed)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup heavy cream or full-fat coconut milk (for dairy-free option)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  2. Add garlic and thyme, cook for 1 minute until fragrant.
  3. Add rinsed wild rice and broth. Bring to boil, then reduce to simmer. Cover and cook for 30 minutes.
  4. Add mushrooms and kale. Season with salt and pepper. Simmer uncovered for 15 minutes.
  5. Stir in cream or coconut milk. Taste and adjust seasoning.
  6. Garnish with fresh parsley and serve with crusty bread.
