Ingredients
- Chicken breasts: 2, boneless and skinless
- Mushrooms: 8 oz, sliced
- Onion: 1 medium, chopped
- Garlic: 2 cloves, minced
- Heavy cream: 1 cup
- Chicken broth: 1/2 cup
- All-purpose flour: 2 tablespoons
- Olive oil: 2 tablespoons
- Salt and pepper: To taste
- Fresh parsley: 2 tablespoons, chopped (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side, until golden brown. Remove from skillet and set aside.
- Add chopped onion and sliced mushrooms to the skillet. Sauté over medium heat for 5-7 minutes, until onions are softened and mushrooms are browned. Add minced garlic and cook for another minute until fragrant.
- Sprinkle flour over the mushroom and onion mixture, stirring to coat evenly. Gradually pour in chicken broth, stirring constantly to dissolve any lumps. Add heavy cream and stir until the sauce is smooth and starts to thicken. Season with salt and pepper to taste.
- Return the seared chicken breasts to the skillet, nestling them into the creamy mushroom sauce. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through (internal temperature of 165°F/74°C). Stir in fresh parsley before serving.
Notes
- Add a splash of white wine for extra flavor (reduce for a few minutes before adding broth and cream).
- For gluten-free, use gluten-free flour or cornstarch.
- Add spinach, bell peppers, or sun-dried tomatoes for extra veggies.
- Adjust sauce thickness by using more or less chicken broth/cream.
