Instructions
- Preheat oven to 375°F (190°C).
- Wash spinach thoroughly. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute). Add chopped spinach and cook until wilted (about 3-5 minutes). Remove from heat and set aside to cool slightly.
- In a mixing bowl, whisk together eggs, heavy cream, and milk until well combined. Season with salt, pepper, and nutmeg (if using).
- Place pie crust in a 9-inch pie dish. Distribute cooked spinach mixture evenly over the bottom of the crust. Sprinkle shredded cheese over the spinach. Pour egg mixture over the spinach and cheese, ensuring it fills the crust evenly.
- Bake in the preheated oven for 35-45 minutes, or until the quiche is set and the crust is golden brown. To prevent the crust from burning, cover the edges with foil during the last 15 minutes of baking if needed.
