Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Pour in the canned crushed tomatoes and the vegetable broth. Stir well to combine. Bring the mixture to a simmer, then reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld together.
  3. Remove the pot from the heat. Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can use a regular blender. Be sure to blend in batches and vent the lid to prevent pressure from building up.
  4. Return the blended soup to the pot and stir in the heavy cream and fresh basil. Heat gently over low heat, being careful not to boil. Season with salt and pepper to taste. If the tomatoes are too acidic, add a pinch of sugar to balance the flavors. Serve hot, garnished with extra basil leaves and a swirl of cream.
