Ingredients
Scale
- 4 boneless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably panko)
- 2 eggs, beaten
- 4 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Flatten the chicken breasts and season with salt and pepper.
- Set up a breading station: dip chicken in beaten eggs, then coat in a mixture of breadcrumbs and Parmesan.
- In a large skillet, heat olive oil and fry the chicken for 6-8 minutes per side until golden brown.
- In the same skillet, cook minced garlic until fragrant, then add heavy cream and season. Allow it to thicken before pouring over the chicken.
Notes
- To store leftovers, place in an airtight container in the fridge for up to three days.
- For gluten-free options, use gluten-free breadcrumbs.
- Chicken thighs can be used instead of chicken breasts for a different flavor.
- Brining the chicken beforehand can help maintain moisture.
