  • 1 (28 ounce) can diced tomatoes, undrained
  • 2โ€“3 chipotle peppers in adobo sauce, chopped (adjust to taste)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, or to taste
  • 12 crispy taco shells
  • Toppings: avocado, shredded lettuce, crumbled cheese, sour cream, salsa, cilantro, lime wedges

Instructions

  1. Combine chicken breasts, diced tomatoes, chopped onions, minced garlic, chipotle peppers, chicken broth, cumin, oregano, and salt in a slow cooker.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is easily shredded.
  3. Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the sauce and stir to combine.
  4. Heat a skillet over medium-high heat. Add the chicken mixture to the skillet and cook until slightly crispy, about 5-7 minutes. Repeat until all chicken is crisped.
  5. Warm taco shells according to package instructions. Fill each taco shell with the crispy Chicken Tinga mixture, and add your favorite toppings.
