- 2 lbs boneless, skinless chicken breasts
- 1 (28 ounce) can diced tomatoes, undrained
- 2โ3 chipotle peppers in adobo sauce, chopped (adjust to taste)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt, or to taste
- 12 crispy taco shells
- Toppings: avocado, shredded lettuce, crumbled cheese, sour cream, salsa, cilantro, lime wedges
Instructions
- Combine chicken breasts, diced tomatoes, chopped onions, minced garlic, chipotle peppers, chicken broth, cumin, oregano, and salt in a slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is easily shredded.
- Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the sauce and stir to combine.
- Heat a skillet over medium-high heat. Add the chicken mixture to the skillet and cook until slightly crispy, about 5-7 minutes. Repeat until all chicken is crisped.
- Warm taco shells according to package instructions. Fill each taco shell with the crispy Chicken Tinga mixture, and add your favorite toppings.
- Serve immediately and enjoy!

- Chicken thighs can be used for a richer flavor.
