- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 pound boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups fresh spinach leaves
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and sauté for 3-4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
- Add diced chicken and cook for 5-6 minutes until no longer pink. Pour in chicken broth and bring to a gentle boil.
- Stir in cannellini beans, sun-dried tomatoes, Italian seasoning, salt, and pepper. Reduce heat and simmer for 15 minutes.
- Add fresh spinach and cook for 1-2 minutes until wilted. Serve topped with Parmesan cheese and fresh basil.
Notes
- For extra flavor, use homemade chicken broth
- Add 1/2 cup small pasta during last 10 minutes for heartier soup
- Substitute kale for spinach if preferred
