Description

  • 2 pounds red potatoes, quartered
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary (optional)
  • 1 teaspoon dried thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Wash and quarter the red potatoes. Place the quartered potatoes in a large bowl.
  3. Add the minced garlic, olive oil, salt, pepper, rosemary, and thyme (if using) to the bowl with the potatoes.
  4. Toss everything together until the potatoes are evenly coated with the oil and seasonings.
  5. Spread the seasoned potatoes in a single layer on a baking sheet.
  6. Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping halfway through.
  7. Garnish with fresh parsley and serve hot.

Notes

  • For extra crispy potatoes, soak them in cold water for 30 minutes before roasting.
