- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400Β°F (200Β°C).
- Wash and quarter the red potatoes. Place the quartered potatoes in a large bowl.
- Add the minced garlic, olive oil, salt, pepper, rosemary, and thyme (if using) to the bowl with the potatoes.
- Toss everything together until the potatoes are evenly coated with the oil and seasonings.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping halfway through.
- Garnish with fresh parsley and serve hot.
Notes
- For extra crispy potatoes, soak them in cold water for 30 minutes before roasting.
- Donβt overcrowd the baking sheet; use two baking sheets if necessary.
