- 2 lbs of potatoes, peeled and cubed
- 1 packet of Lipton onion soup mix
- 2 cups of water
- 1 cup of shredded cheese (optional)
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Prepare the Potatoes: Peel and cube the potatoes into bite-sized pieces and place them in a large bowl.
- Combine Ingredients: In a pot, mix the water with Lipton onion soup mix until dissolved. Add cubed potatoes to the pot and coat evenly.
- Simmer the Potatoes: Bring the pot to a simmer over medium heat, cover, and cook for about 15 minutes until tender, stirring occasionally.
- Bake with Cheese: Preheat the oven to 350°F (175°C). Transfer tender potatoes to a baking dish, sprinkle cheese if desired, drizzle with olive oil, and bake for 20-25 minutes until golden.
Notes
- Leftover potatoes store well in an airtight container for up to 3 days in the refrigerator.
- For longer storage, freeze them in freezer-safe portions for up to 2 months.
- Serve with fresh herbs or a dollop of sour cream for enhanced flavor.
