Instructions
- Heat olive oil in a large skillet over medium heat; sautรฉ onions and garlic until translucent, about 3-4 minutes.
- Add ground beef, breaking it apart; cook until browned, about 5-7 minutes. Drain excess fat and season with Italian seasoning, salt, and pepper.
- Incorporate bell peppers and zucchini; stir-fry for about 5 minutes until tender yet vibrant.
- Add canned diced tomatoes, stir well, and cook for another 2-3 minutes. Garnish with fresh parsley before serving.
Notes
- This stir fry can be stored in an airtight container in the fridge for up to 3 days.
- Serve over rice or with pita bread for a complete meal.
- Ground turkey or chicken can be used as a leaner alternative.
