- 1 pre-made pie crust
- 10 ounces fresh spinach, washed and chopped
- 4 large eggs
- 1 cup milk (or cream for a richer taste)
- 1/2 cup crumbled feta cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 clove garlic, minced (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic (if using) and cook for about 30 seconds until fragrant. Add the chopped spinach and cook until it wilts, about 3-5 minutes. Remove from heat and let it cool slightly. In a bowl, combine the cooked spinach and feta cheese.
- In a separate bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined.
- Place the pre-made pie crust on a baking sheet. Spread the spinach and feta mixture evenly over the bottom of the crust.
- Pour the egg mixture over the spinach and feta filling. Make sure the filling is evenly distributed. Bake in a preheated oven at 375°F (190°C) for 30-40 minutes, or until the quiche is set and the crust is golden brown. A knife inserted into the center should come out clean. Let it cool slightly before slicing and serving.
Notes
- For a crispier crust, pre-bake it for 10 minutes before adding the filling.
- Don’t overcook the quiche, or it can become rubbery. Keep an eye on it and remove it from the oven when it’s just set.
- Allowing the quiche to cool slightly helps it set and makes it easier to slice.
- Add sautéed mushrooms, onions, or bell peppers to the spinach mixture for extra flavor.
