  • 3/4 cup heavy cream, plus more for whipping
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for macerating strawberries)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Cut in cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  3. Gently stir in heavy cream and vanilla extract until just combined. Do not overmix.
  4. Turn dough out onto a lightly floured surface and pat into a 1-inch thick circle. Cut out shortcakes with a biscuit cutter or knife.
  5. Place shortcakes on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown.
  6. While shortcakes bake, combine sliced strawberries and sugar in a medium bowl. Let macerate for at least 30 minutes.
  7. Whip remaining heavy cream until stiff peaks form.
  8. Once shortcakes are cooled, split in half. Spoon macerated strawberries over bottom half, top with whipped cream, and place top half on top. Serve immediately.
