  • 1/2 cup all-purpose flour (or gluten-free alternative)
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 tablespoons chopped fresh herbs (such as parsley, dill, or chives)
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper and spray with olive oil.
  2. Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 15-20 minutes to remove excess moisture. Squeeze out as much liquid as possible.
  3. In a medium bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, herbs, and garlic. Season with salt and pepper. Mix well.
  4. Spoon the zucchini mixture onto the baking sheet, forming small patties. Flatten each patty with the back of a spoon.
  5. Spray the tops of the fritters with olive oil spray. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  6. Serve immediately.
