- 2 medium zucchini, grated
- 1/2 cup all-purpose flour (or gluten-free alternative)
- 1/4 cup grated Parmesan cheese
- 1 egg, lightly beaten
- 2 tablespoons chopped fresh herbs (such as parsley, dill, or chives)
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper and spray with olive oil.
- Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 15-20 minutes to remove excess moisture. Squeeze out as much liquid as possible.
- In a medium bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, herbs, and garlic. Season with salt and pepper. Mix well.
- Spoon the zucchini mixture onto the baking sheet, forming small patties. Flatten each patty with the back of a spoon.
- Spray the tops of the fritters with olive oil spray. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- Serve immediately.
