Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup shortening
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Frosting:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–4 tablespoons milk
  • Red food coloring (for the baseball stitching)

Instructions

  1. Step 1: Prepare Your Ingredients and Pans: Preheat your oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
  2. Step 2: Mix the Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well to ensure even distribution of the leavening agent.
  3. Step 3: Combine Wet and Dry Ingredients: Add the shortening and milk to the dry ingredients. Mix on low speed until just combined. Add the eggs and vanilla extract, then beat on medium speed for about 2 minutes until the batter is smooth and creamy.
  4. Step 4: Bake and Cool the Cakes: Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  5. Frosting and Decoration: While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until light and fluffy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the vanilla extract and milk, one tablespoon at a time, until you reach a smooth and spreadable consistency. Frost the top of one cake layer and place the second layer on top. Frost the entire cake with the remaining frosting.
  6. To decorate your baseball themed cake, create the baseball stitching. Mix a small amount of frosting with red food coloring. Fill a piping bag fitted with a small round tip with the red frosting. Pipe curved lines on the cake to resemble baseball stitches. Use a toothpick or small spatula to smooth the lines if needed.

Notes

  • Use Room Temperature Ingredients: Softened butter and room temperature eggs mix more evenly, resulting in a smoother batter and a more tender cake.
  • Don’t Overmix: Overmixing develops the gluten in the flour, which can make the cake tough. Mix until just combined.
  • Cool Cakes Completely: Frosting a warm cake will cause the frosting to melt and slide off.
  • Level the Cakes: Use a serrated knife to level the tops of the cakes before frosting to ensure a flat, even surface.
  • Customize the Decorations: Use your favorite team’s colors for the frosting or add edible decorations like baseball toppers.
