Instructions
- Prep the Carrots: Wash, peel, and trim the carrots. Cut into even-sized pieces (or leave baby carrots whole).
- Arrange on Baking Sheet: Preheat oven to 400°F (200°C). Place carrots in a single layer on a baking sheet.
- Drizzle with Honey Mixture: Whisk together olive oil, honey, garlic powder, salt, and black pepper. Coat carrots evenly.
- Roast to Perfection: Roast for 20-25 minutes, flipping halfway, until tender and caramelized.
- Garnish & Serve: Sprinkle with fresh parsley (optional) and serve warm.
