Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Wash and cube red potatoes into 1-inch pieces.
  3. Place potatoes in a large pot, cover with cold water, and bring to a boil. Parboil for 8-10 minutes until slightly tender.
  4. Drain potatoes in a colander and let them steam dry for a few minutes.
