Instructions

  1. Preheat your oven to 325Β°F (160Β°C). Grease and flour a 9Γ—5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. In the bowl with the mashed bananas, add the softened butter and sugar. Cream together until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract. Add cinnamon.
  5. In a separate bowl, whisk together the flour, baking soda (slightly reduced for high altitude), and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk or buttermilk, beginning and ending with the dry ingredients.
