Instructions
- Preheat your oven to 325Β°F (160Β°C). Grease and flour a 9Γ5 inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- In the bowl with the mashed bananas, add the softened butter and sugar. Cream together until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract. Add cinnamon.
- In a separate bowl, whisk together the flour, baking soda (slightly reduced for high altitude), and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk or buttermilk, beginning and ending with the dry ingredients.
- Pour the batter into the prepared loaf pan. If desired, sprinkle the top with chopped walnuts or pecans.
