  • 2 tablespoons olive oil
  • 1 sprig fresh rosemary
  • Salt and pepper to taste
  • 1 cup fresh mint leaves
  • 2 cloves garlic
  • Juice of 1 lemon
  • 2 tablespoons butter

Instructions

  1. Pat the lamb chops dry with a paper towel and season generously with salt and pepper.
  2. Heat olive oil and rosemary in a large skillet or grill pan over medium-high heat.
  3. Place the lamb chops in the skillet, ensuring not to overcrowd. Sear for 4-5 minutes on each side for medium-rare, or longer to your liking. Remove from the pan and let rest.
