Instructions

  1. Crust Preparation: Preheat oven to 350Β°F (175Β°C). Line a 9Γ—13 inch baking pan with parchment paper. Combine flour, powdered sugar, and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Making the Filling: In another bowl, whisk together granulated sugar, flour, and salt. Add eggs one at a time, whisking well after each addition. Stir in lemon juice and zest until smooth.
  3. Baking the Crust: Press the crumb mixture evenly into the bottom of the prepared pan. Bake for 18-20 minutes, or until lightly golden brown.
  4. Baking the Lemon Bars: Pour the lemon filling over the warm crust. Bake for an additional 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
