Ingredients

Scale
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup melted butter or oil
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 3/4 cup milk

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds.
  3. In a separate bowl, whisk together the melted butter or oil, eggs, lemon zest, lemon juice, and milk.
  4. Gently pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture until just combined. Do not overmix.
  5. Fill each muffin liner about 2/3 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, use room temperature ingredients.
  • Avoid overmixing the batter to prevent tough muffins.
  • Sprinkle coarse sugar on top of the muffins before baking for added sweetness and texture.
