Description

This Loaded Baked Potato Soup recipe is a creamy and comforting delight, perfect for chilly days. Enjoy the rich, cheesy flavor loaded with bacon, cheddar, and sour cream.


Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and celery and sauté until softened, about 5 minutes.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. While the potatoes are cooking, cook the bacon until crispy. Remove from the pan and place on a paper towel-lined plate to drain excess grease. Once cooled, crumble the bacon into small pieces and set aside.
  4. Once the potatoes are tender, remove the pot from the heat. Use an immersion blender to blend the soup until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup to a regular blender in batches and blend until smooth. Return the blended soup to the pot.
  5. Stir in the milk and softened cream cheese until well combined and the soup is smooth.
  6. Add the shredded cheddar cheese and stir until melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with crumbled bacon, shredded cheddar cheese, a dollop of sour cream, and chopped green onions.

Notes

  • Use high-quality ingredients for the best flavor.
  • Don’t overcook the potatoes. Cook them until just tender.
  • Adjust the consistency with more or less milk.
  • For a vegetarian version, use vegetable broth and omit bacon or use vegetarian bacon.
