Ingredients

- 1 bag of frozen tater tots
- 1 lb of bacon, cooked and crumbled
- 1 cup of BBQ sauce
- 2 cups of shredded cheese (cheddar or a blend)
- 1/2 cup of onions, diced
- Salt and pepper to taste
- 1/4 cup of chopped green onions for garnish
Instructions
- Preheat the oven according to the tater tots packaging. Spread the frozen tater tots on a baking sheet and season with salt and pepper. Bake until golden brown and crispy.
- In a casserole dish, layer half of the crispy tater tots. Sprinkle crumbled bacon over the tater tots, drizzle half of the BBQ sauce, and add the diced onions.
- Sprinkle one cup of shredded cheese over the layers. Repeat the layering with the remaining tater tots, bacon, BBQ sauce, onions, and top with the remaining cheese.
- Cover the casserole with aluminum foil and bake for 25-30 minutes. Remove the foil and bake an additional 10-15 minutes until the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze the casserole for up to 2 months, thawing it overnight in the refrigerator before reheating.
- This casserole can be served as a standalone meal or with sides like green salad or coleslaw.
- Customize with extra BBQ sauce or hot sauce before serving for an added kick!
