  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups grated Parmesan cheese, divided
  • 1 cup Italian seasoned breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • ¼ cup olive oil
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken Cutlets: Pound chicken breasts to ½ inch thickness. Season with salt, pepper, garlic powder, and onion powder.
  2. Create the Breading Station: Set up three shallow dishes with flour, beaten eggs, and a mixture of breadcrumbs and 1 cup Parmesan cheese. Dredge each chicken cutlet in flour, then egg, then Parmesan breadcrumb mixture.
  3. Pan-Fry the Chicken: Heat olive oil in a large skillet over medium heat. Cook chicken for 3-4 minutes per side until golden brown and cooked through. Drain excess oil on paper towels.
  4. Make the Parmesan Sauce and Bake: In the same skillet, melt butter, add minced garlic and sauté until fragrant. Pour in heavy cream and chicken broth, and bring to a simmer. Add the remaining ½ cup Parmesan cheese and stir until smooth. Season with salt and pepper.
  5. Preheat oven to 375°F (190°C). Place fried chicken in a baking dish, pour Parmesan sauce over the chicken, and sprinkle with mozzarella cheese. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh parsley and serve hot.
