- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-style breadcrumbs
- 1 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon salt
- ยฝ teaspoon black pepper
- Olive oil for frying
Instructions
- Prepare the chicken by pounding it to an even thickness between sheets of plastic wrap.
- Prepare three bowls: one with seasoned flour, another with beaten eggs, and the last with breadcrumbs mixed with Parmesan cheese.
- Bread the chicken by dipping first in flour, then in egg, and finally in the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and fry the chicken for 5-7 minutes on each side until golden brown and cooked through.
- Let the chicken rest for a couple of minutes before serving. Optionally garnish with parsley and extra Parmesan.
Notes
- Leftovers can be stored in an airtight container for up to 3 days.
- For longer storage, freeze the cooked chicken in a freezer-safe container for up to 3 months.
- If desired, serve with garlic mashed potatoes, roasted asparagus, or a creamy marinara sauce.
