- 1 cup rolled oats
- 2 cups milk (dairy or plant-based)
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup honey or maple syrup (for sweetness)
- Fresh berries for garnish (optional)
Instructions
- In a medium saucepan, combine the rolled oats, milk, and salt. Cook over medium heat until the mixture comes to a gentle boil. Reduce heat to low and simmer for about 5 minutes, stirring frequently.
- While the oats are cooking, whisk together the eggs, vanilla extract, and ground cinnamon in a bowl until well combined.
- Once the oats are cooked, remove from heat and let them cool for a couple of minutes. Gradually add the egg mixture to the oats, stirring constantly to avoid curdling.
- Pour the oatmeal custard mixture into a greased baking dish and preheat your oven to 350°F (175°C). Bake for 25-30 minutes, until the custard is set and lightly browned on top.
Notes
- Serve warm or chilled, topped with fresh berries and a drizzle of honey or maple syrup.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Can be made ahead by preparing the mixture the night before and baking in the morning.
