  • 1 egg, lightly beaten

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. Add the shredded cabbage to the dry ingredients.
  4. In a separate bowl, combine the milk, vegetable oil, and lightly beaten egg. Mix well.
  5. Pour the wet ingredients into the bowl with the dry ingredients and cabbage. Gently fold until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, cover loosely with aluminum foil during the last 15-20 minutes.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
