Instructions
- In a large bowl, combine olive oil, minced garlic, chopped mint, and lemon juice. Season with salt and pepper. Add the lamb chops to the bowl and ensure they are well coated with the marinade. Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for a deeper flavor.
- Heat a cast-iron skillet or grill pan over medium-high heat. Add a tablespoon of olive oil to the skillet.
- Remove the lamb chops from the marinade, letting any excess drip off. Place the lamb chops in the hot skillet, ensuring not to overcrowd the pan. Sear for 3-4 minutes on each side for medium-rare, or longer depending on your desired level of doneness.
- Use a meat thermometer to check the internal temperature of the lamb chops. For medium-rare, aim for 130-135°F (54-57°C). Once cooked to your liking, remove the lamb chops from the skillet and let them rest for 5 minutes before serving.
