- 1 (9-inch) pre-made pie crust
- 10 ounces fresh spinach, washed and chopped
- 4 large eggs
- 1 cup milk
- 1/2 cup feta cheese, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped spinach and cook until wilted, about 5 minutes. Remove from heat and set aside.
- Place the pre-made pie crust in a 9-inch pie dish. Sprinkle the crumbled feta cheese evenly over the bottom of the crust.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Add the wilted spinach to the egg mixture and stir gently to incorporate.
- Pour the spinach and egg mixture over the feta cheese in the pie crust. Bake in a preheated oven at 375Β°F (190Β°C) for 30-35 minutes, or until the filling is set and the crust is golden brown.
- Let cool slightly before slicing and serving.
Notes
- For an extra crispy crust, pre-bake it for 10 minutes before adding the filling.
