Description

This quick spinach quiche recipe is the perfect easy meal for brunch, lunch, or dinner! It features a creamy spinach and feta filling in a flaky crust, ready in under an hour.

  • 1 (9-inch) pre-made pie crust
  • 10 ounces fresh spinach, washed and chopped
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup feta cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped spinach and cook until wilted, about 5 minutes. Remove from heat and set aside.
  2. Place the pre-made pie crust in a 9-inch pie dish. Sprinkle the crumbled feta cheese evenly over the bottom of the crust.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Add the wilted spinach to the egg mixture and stir gently to incorporate.
  4. Pour the spinach and egg mixture over the feta cheese in the pie crust. Bake in a preheated oven at 375Β°F (190Β°C) for 30-35 minutes, or until the filling is set and the crust is golden brown.
  5. Let cool slightly before slicing and serving.

  • For an extra crispy crust, pre-bake it for 10 minutes before adding the filling.
