Perfect for a light lunch or a satisfying dinner, this recipe brings the taste of Greece to your table.

Ingredients

Scale
  • 2 lbs Yukon Gold potatoes, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, excess water squeezed out
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill, chopped
  • Pinch of salt
  • 5 oz baby spinach
  • Optional toppings: feta cheese, Kalamata olives, red onion slices

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Toss cubed potatoes with olive oil, paprika, garlic powder, salt, and pepper.
  2. Spread potatoes in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and tender.
  3. While potatoes roast, combine Greek yogurt, grated cucumber (squeezed of excess water), minced garlic, lemon juice, fresh dill, and a pinch of salt in a small bowl. Mix well.
  4. Place a bed of fresh spinach in each bowl. Top with roasted potatoes and a generous dollop of tzatziki sauce. Add optional toppings like feta cheese, Kalamata olives, and red onion slices. Serve immediately.

Notes

  • For extra crispy potatoes, parboil them for 5 minutes before roasting.
  • Add a pinch of red pepper flakes to the potatoes for a spicy kick.
  • Substitute sweet potatoes for a sweeter flavor profile.
  • For a vegan version, use plant-based yogurt for the tzatziki sauce.
  • Add grilled chicken or chickpeas for extra protein.
  • Customize with your favorite vegetables like bell peppers, zucchini, or tomatoes.
