- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped fresh parsley
- 1 egg, beaten
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- Prepare the Ingredients: Drain the canned salmon thoroughly. In a large mixing bowl, flake the salmon with a fork, removing any bones or skin if desired.
- Mix the Salmon Cake Mixture: Add the breadcrumbs, chopped onion, fresh parsley, beaten egg, lemon juice, Dijon mustard, salt, and pepper to the bowl with the flaked salmon. Mix until well combined.
- Form the Salmon Cakes: Take a spoonful of the mixture and form it into a patty about 1/2 inch thick. Repeat with the remaining mixture.
- Cook the Salmon Cakes: Heat olive oil in a skillet over medium heat. Cook salmon cakes for about 4-5 minutes per side, until golden brown and cooked through. Alternatively, bake at 375Β°F (190Β°C) for 15-20 minutes, flipping halfway through.
