Description

  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped fresh parsley
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. Prepare the Ingredients: Drain the canned salmon thoroughly. In a large mixing bowl, flake the salmon with a fork, removing any bones or skin if desired.
  2. Mix the Salmon Cake Mixture: Add the breadcrumbs, chopped onion, fresh parsley, beaten egg, lemon juice, Dijon mustard, salt, and pepper to the bowl with the flaked salmon. Mix until well combined.
  3. Form the Salmon Cakes: Take a spoonful of the mixture and form it into a patty about 1/2 inch thick. Repeat with the remaining mixture.
  4. Cook the Salmon Cakes: Heat olive oil in a skillet over medium heat. Cook salmon cakes for about 4-5 minutes per side, until golden brown and cooked through. Alternatively, bake at 375Β°F (190Β°C) for 15-20 minutes, flipping halfway through.
