- 1 lb Italian sausage (mild or hot, depending on preference)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Brown the Italian sausage in a large pot over medium heat, breaking it into small pieces. Drain excess grease if needed.
- Add diced onion and sauté until translucent. Stir in garlic, tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 15 minutes.
- Reduce heat to low, stir in heavy cream, and heat through (do not boil). Mix in Parmesan until melted.
- Season with salt and black pepper, then ladle into bowls. Garnish with fresh herbs and serve warm.

- For a lighter version, substitute half-and-half for heavy cream.
- Add spinach or kale for extra nutrients.

- If too thick, thin with additional chicken broth.
