- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup unsalted butter, melted
- 1 large egg
- 2 tbsp honey (plus extra for drizzling)
Instructions
- In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk buttermilk, melted butter, egg, and honey. Combine with dry ingredients.
- Preheat oven to 400°F (200°C). Grease a cast-iron skillet or mini muffin tin.
- Spoon batter into prepared pan and bake for 12-15 minutes until golden brown.
- Drizzle with extra honey while warm and serve.
Notes
- For a buttermilk substitute, mix 1 tbsp lemon juice with 1 cup milk and let sit for 5 minutes.
- Store leftovers in an airtight container for up to 2 days.
- Add jalapeños, cheese, or bacon for a savory twist.
