  • 10 ounces fresh spinach, washed and chopped
  • 1 red bell pepper, roasted and diced
  • 4 large eggs
  • 1 cup heavy cream
  • 4 ounces feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Prepare spinach, red pepper, and feta.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds. Add spinach and red pepper; cook for 5-7 minutes. Remove from heat and cool slightly.
  3. In a mixing bowl, whisk eggs and heavy cream. Season with salt and pepper. Fold in spinach, red pepper, and feta cheese.
  4. Place pie crust in pie dish. Pour spinach mixture into crust.
