Ingredients

  • 6 ounces fresh spinach, washed thoroughly
  • 1 pint fresh strawberries, hulled and sliced
  • 4 ounces feta cheese, crumbled

Instructions

  1. Thoroughly wash the spinach under cold running water and pat dry.
  2. Wash and hull the strawberries, then slice them into thin, even pieces. Crumble the feta cheese.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper.
